- ½ cup old-fashioned oats
- ½ cup coconut milk
- ⅓ cup fat-free vanilla Greek yogurt
- 1 teaspoon honey
- 1 teaspoon chia seeds
- ⅓ cup pineapple chunks fresh or canned, drained
- 1 tablespoon coconut flakes
In a mason jar or small container, combine the oats, coconut milk, Greek yogurt, honey, and chia seeds. Stir until well combined.
Fold in the pineapple chunks and half of the coconut flakes.
Cover and refrigerate overnight (or at least 4 hours).
In the morning, stir the oats and top with remaining coconut flakes and extra pineapple if desired.
