Equipment

  • 1 Mixing bowl
  • 1 cutting board
  • 1 pairing knife
  • 1 8-12 oz mason jar or airtight container
  • 1 measuring cups
  • 1 measuring spoon
  • 1 mixing spoon

Ingredients
  

  • ½ cup old-fashioned oats
  • ½ cup coconut milk
  • cup fat-free vanilla Greek yogurt
  • 1 teaspoon honey
  • 1 teaspoon chia seeds
  • cup pineapple chunks fresh or canned, drained
  • 1 tablespoon coconut flakes

Instructions
 

  • In a mason jar or small container, combine the oats, coconut milk, Greek yogurt, honey, and chia seeds. Stir until well combined.
  • Fold in the pineapple chunks and half of the coconut flakes.
  • Cover and refrigerate overnight (or at least 4 hours).
  • In the morning, stir the oats and top with remaining coconut flakes and extra pineapple if desired.
  • Enjoy cold for an easy, refreshing breakfast during busy mornings.
